Yeah, it's pretty easy until the final round. I got the achievement yesterday, because I somehow managed to dodge the first guy's knife and took it away from him. (and stabbed the rest) It's all about timing tho, spamming A won't do as someone posted earlier. A baseball bat is relatively easy to dodge, but a knife is harder. It took me about 10 tries until I got this.
